For all the sugar-addicted out there, this recipe is for you! Bananas and walnuts are a great combination, that’s why I decided to come out with this recipe and show you how to bake a perfect Bananas and walnuts Gluten Free cake.

INGREDIENTS 


215 gr Flour (Mix 125 gr Gluten Free flour + 90 gr Mais flour)

340 gr Bananas

2 Eggs

65 gr Walnuts

120 gr Sugar

110 gr Butter

8 gr Gluten free baking powder

8 gr Vanilla sugar


PREPARATION

First of all, start by finely chopping the walnuts (you can use an Electric Slicer) and put them aside in a small bowl.

After that, you can go ahead and peel the bananas, placing them on a cutting board and cut them into small pieces. Pour the bananas cut on a mixer and blend them to obtain a homogeneous and lump-free pulp. Then keep the mixture aside in another small bowl.

At this point, take the eggs and break them into a high-edged bowl. Separate egg white from the yolk (keep the yolks in the high-edged bowl).

Using an electric mixer, work the yolks, adding the sugar little by little.

Continue to mix the mixture until you obtain a dough with a frothy consistency and a light color.

You can then add the butter (make sure to leave it outside of the fridge for a while before adding to the mixture). You can then gradually add the sifted flour to the mixture together with the baking powder and the vanilla sugar, so as to avoid the formation of lumps.

Then add the banana mixture that you have previously prepared and continue to mix the ingredients with the electric mixer. Now pour the chopped walnuts into the dough.

The final step would be beating the egg whites until stiff and then pouring them into the dough. Blend them from the top down. 

At this point, take a 24 cm diameter cake tin and clothe it with baking paper. Pour then the mixture into the cake tin and bake in a ventilated oven at 160 °C for 40  minutes. 

Let it cool down at room temperature. Serve the banana and nuts Gluten Free cake with a chocolate on top if you want it to be even tastier.
